Ruth's Cream Puffs
"These homemade cream puffs were always eaten has fast as they were served"
- Ingredients - Filling

- 1 CUP MILK
- 5 TABLE SPOONS FLOUR
- MIX 1/2 CUP CRISCO
- 1/2 CUP MARGARINE
- 1 CUP SUGAR
- A DASH OF SALT
- Preparation - Filling

- mix milk and flour cook until a thick paste
- remove and let cool
- mix Crisco, margarine,sugar and salt until creamy
- add teaspoon of vanilla
- combine both mixtures and beat until fluffy
- refrigerate overnight
- Ingredients - Pastry

- 1/2 Cup Shortening
- 1/8 tsp salt
- 1 cup sifted flour
- 4 eggs
- 1 cup water
- Preparation - Pastry

- cream shortening and salt in 1 cup boiling water
- bring to boil again, reduce heat and add flour
- stir vigorously until mixture clings to a spoon and leaves pan free.
- remove from and add 4 eggs one at a time, beating until shiny
- put 1 tbsp per puff on an ungreased cookie sheet
- bake 20min. at 450 degrees then 20min. at 350 degrees
- cool and fill
Notes
Keep pastry and filling separate until serving
