Fodmap Friendly Roast Chicken

"Super Moist"
Ingredients
  1. 5 to 6 lb Chicken
  2. 2 tbsp garlic infused olive oilribs (trim excess fat)
  3. 1 lemon cut in half
  4. 3 sprigs fresh or (2 tbsp dried) rosmary
  5. 1 tsp paprika
  6. 1 tsp salt
  7. 1 teaspoon freshly ground black pepper
  8. 2 tbsp butter
Preparation
  1. Pre-heat oven to 450 degrees
  2. Remove gizzards and rinse chicken inside and out. Pat dry
  3. Squeeze 1/2 a lemon over the top
  4. Put both lemon halves inside chicken cavity.
  5. Rub the outside generously with olive oil.
  6. Rub all over with salt, pepper, paprika and rosemary.
  7. Put in oven breast up in roasting pan with wire rack. Cook for 10 - 15 minutes.
  8. Turn bird over and reduce temperture to 350 degrees. cook for 20 minutes per pound ( 6 lb bird 2 hours ).
  9. Baste with melted butter.
  10. Check that internal temperture is 165 degrees or higher.
