Fodmap Friendly Roast Chicken
"Super Moist"
- Ingredients

- 5 to 6 lb Chicken
- 2 tbsp garlic infused olive oilribs (trim excess fat)
- 1 lemon cut in half
- 3 sprigs fresh or (2 tbsp dried) rosmary
- 1 tsp paprika
- 1 tsp salt
- 1 teaspoon freshly ground black pepper
- 2 tbsp butter
- Preparation

- Pre-heat oven to 450 degrees
- Remove gizzards and rinse chicken inside and out. Pat dry
- Squeeze 1/2 a lemon over the top
- Put both lemon halves inside chicken cavity.
- Rub the outside generously with olive oil.
- Rub all over with salt, pepper, paprika and rosemary.
- Put in oven breast up in roasting pan with wire rack. Cook for 10 - 15 minutes.
- Turn bird over and reduce temperture to 350 degrees. cook for 20 minutes per pound ( 6 lb bird 2 hours ).
- Baste with melted butter.
- Check that internal temperture is 165 degrees or higher.
