Tuscan Chicken Parmesan

"Can't believe this is low calorie"
Ingredients
  1. 2 lb chicken breast (boneless, and butterflied)
  2. 1 tbsp vegetable spread (like: I can't believe its not butter lite)
  3. 8 oz. baby bella mushrooms
  4. 4 cloves garlic (minced)
  5. 1/2 cup almond milk
  6. 1/2 cup non fat greek yogurt
  7. 1 tbsp cornstarch + 1 tbsp water
  8. 1 tbsp garlic powder
  9. 1/4 cup shaved Parmesan cheese
  10. 1/4 cup sun dried tomatoes
  11. Salt and pepper to taste
  12. Garnish with chopped parsley
Preparation
  1. Saute chicken in vegetable spread until done (internal temp.165 ), season with salt and pepper, and set aside.
  2. In same skillet at medium heat saute garlic and mushrooms.
  3. Add yogurt, almond milk, garlic powder, and cheese.
  4. In a small container mix cornstarch and water and add to pan stirring constantly.
  5. Add tomatoes when mixture begins to thicken.
  6. Add salt & pepper to taste.
  7. Return chicken to pan and sprinkle with parsley.
