Air Fried Coconut Shrimp

" Great Air fried"
Ingredients Shrimp
  1. 1 lb jumbo shrimp peeled and deveined, fresh or frozen with tails on.
  2. 1/2 cup flour
  3. 1/2 tsp salt
  4. 1/4 tsp pepper
  5. 1/4 tsp paprika
  6. 2 large eggs
  7. 1/2 cup coconut sweetened or unsweetened
  8. 1 cup panko crumbs.
  9. Cooking spray
 
Preparation
  1. Mix flour, salt, pepper and paprika.
  2. In seperate container beat 2 eggs.
  3. In a 3rd container mix coconut and panko crumbs
  4. First roll shrimp in flour, then dip in egg , then roll in coconut / panko mixture.
  5. Cook single layer (approx 6 pieces - don't crowd) in an air fryer at 400 degrees for 10 -12 minutes.
  6. Serve with Honey Siracha dipping sauce (see below)
Honey Siracha Sauce
  1. 1/2 cup mayonaise.
  2. 1 tbsp siracha sauce
  3. 1 tbsp honey
  4. 1/2 tsp soy sauce
  5. Mix well.
