Air Fried Coconut Shrimp
" Great Air fried"
- Ingredients Shrimp

- 1 lb jumbo shrimp peeled and deveined, fresh or frozen with tails on.
- 1/2 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp paprika
- 2 large eggs
- 1/2 cup coconut sweetened or unsweetened
- 1 cup panko crumbs.
- Cooking spray
- Preparation

- Mix flour, salt, pepper and paprika.
- In seperate container beat 2 eggs.
- In a 3rd container mix coconut and panko crumbs
- First roll shrimp in flour, then dip in egg , then roll in coconut / panko mixture.
- Cook single layer (approx 6 pieces - don't crowd) in an air fryer at 400 degrees for 10 -12 minutes.
- Serve with Honey Siracha dipping sauce (see below)
- Honey Siracha Sauce

- 1/2 cup mayonaise.
- 1 tbsp siracha sauce
- 1 tbsp honey
- 1/2 tsp soy sauce
- Mix well.
