Lentil Soup
- Ingredients

- 2 cups lentils (soaked overnight)
- 2 carrots (peeled and diced)
- 2 celery stalks diced)
- 1 medium yellow onion diced
- 1/2 cup spinach
- 6 cups chicken broth -low sodium
- 14 oz can diced tomatoes
- 2 cloves garlic (minced)
- 1/2 tsp cumin
- 1/2 tsp thyme
- 1/2 tsp paprika
- 1 bay leaf
- 2 tbsp olive oil
- Preparation

- Soak lentils overnight for best results
- Saute onion, celery and garlic
- In large pot add beans (drained), chicken stock then the rest of the ingredients.
- Bring to a boil then turn down heat and simmer until beans are soft and carrots cooked (1-2 hours)
