Lentil Soup

 
Ingredients
  1. 2 cups lentils (soaked overnight)
  2. 2 carrots (peeled and diced)
  3. 2 celery stalks diced)
  4. 1 medium yellow onion diced
  5. 1/2 cup spinach
  6. 6 cups chicken broth -low sodium
  7. 14 oz can diced tomatoes
  8. 2 cloves garlic (minced)
  9. 1/2 tsp cumin
  10. 1/2 tsp thyme
  11. 1/2 tsp paprika
  12. 1 bay leaf
  13. 2 tbsp olive oil
 
Preparation
  • Soak lentils overnight for best results
  • Saute onion, celery and garlic
  • In large pot add beans (drained), chicken stock then the rest of the ingredients.
  • Bring to a boil then turn down heat and simmer until beans are soft and carrots cooked (1-2 hours)
