"Esther has many mexican dishes, this is my favorite"
- 12 corn tortillas
- 1 lb Mexican Cheese Mix grated
- Canned Enchilada Sauce
- Heat 12 Corn Tortillas on open flame to make pliable .
- Roll with cheese/ mozzarella Cheese and onion and chopped olives.
- Place individually in 8x8 casserole dish. Combine. Top with Cheese
- Top with Cheese
- Pour over enchilada sauce and bake at 350 degrees until hot and bubbly
Serve with beans and rice
