Cheese Enchiladas

"Esther has many Mexican dishes, this is my favorite"
  1. 12 corn tortillas
  2. 1 lb mexican cheese mix grated
  3. 1 6oz Olives
  4. 1 16oz canned enchilada sauce
  5. 1 small yellow onion
  1. Heat 12 Corn Tortillas on open flame to make pliable .
  2. Roll with cheese,onion and chopped olives.
  3. Place individually in 8x8 casserole dish.
  4. Top with cheese
  5. Pour enchilada sauce over top and bake at 350 degrees until hot and bubbly.


Serve with beans and rice
