Cheese Enchiladas

"Esther has many mexican dishes, this is my favorite"
Ingredients
  1. 12 corn tortillas
  2. 1 lb Mexican Cheese Mix grated
  3. Olives
  4. Canned Enchilada Sauce
  5. Onions
Preperation
  1. Heat 12 Corn Tortillas on open flame to make pliable .
  2. Roll with cheese/ mozzarella Cheese and onion and chopped olives.
  3. Place individually in 8x8 casserole dish. Combine. Top with Cheese
  4. Top with Cheese
  5. Pour over enchilada sauce and bake at 350 degrees until hot and bubbly

Notes

Serve with beans and rice
