"Esther has many Mexican dishes, this is my favorite"
- 12 corn tortillas
- 1 lb mexican cheese mix grated
- 1 6oz Olives
- 1 16oz canned enchilada sauce
- 1 small yellow onion
- Heat 12 Corn Tortillas on open flame to make pliable .
- Roll with cheese,onion and chopped olives.
- Place individually in 8x8 casserole dish.
- Top with cheese
- Pour enchilada sauce over top and bake at 350 degrees until hot and bubbly.
Serve with beans and rice
