GREEN CHILE (Chile Verde De Res)

"Hearty Mexican Stew"
  1. 1 cup beef broth

  2. 1 small can diced chilies

  3. 1 lb diced beef or lean (93%) Hamburger

  4. 1 medium onion (diced)

  5. 1 bay leaf
  6. 6 cloves garlic (chopped)
  7. Large can green enchilada sauce

  8. 1 tbsp chili powder
  9. 2 tsp ground cumin
  10. ¼ tsp Cayenne pepper
  11. 1 can stewed tomato (optional)

  12. ½ lb uncooked pinto beans (or add canned beans at last hour of cooking)

  13. Add grated cheese and diced onions on top
  1. Brown diced beef / hamburger and add to crock pot.
  2. Add all ingredients and stir
  3. Simmer all day but no less than 5 hours to cook pinto beans.


Spoon into tortillas.  Roll into burritos and cover with sauce. Sprinkle top with cheddar cheese. Place under broiler for cheese to melt and serve as wet burritos.
