Grandma's Swedish Pancakes

"Although my mother fixed these often, grandma's pancakes were the best. Served with homemade jams and topped with powdered sugar.
Ingredients
  1. 3 eggs
  2. 1 1/4 cups flour
  3. 1/2 teaspoon salt
  4. 3 tablespoons unsalted butter or 3 tablespoons margarine, melted
  5. powdered sugar
  6. loganberry preserve
Preparation
  1. In a large mixing bowl, beat the eggs with half the milk.
  2. Beat in flour and salt until smooth
  3. Stir in melted butter and remaining milk.
  4. Heat a griddle or large skillet with a small amount of vegetable oil.
  5. For each pancake, pour about 1/4 cup batter onto the griddle and cook over medium heat 1 to 2 minutes.
  6. With a spatula, turn the pancakes and cook until golden brown, about 1/2 minute
  7. spread with loganberry preserve (or any jelly) and butter.
  8. roll them up and sprinkle with powdered sugar and syrup(optional)
