Potato Sausage(Potatis Korv)

Potato Sausage is a Swedish Christmas Tradition. The local butcher at Picketts Market used to make it using the Roxberg's recipe.
  1. 6 pounds beef ( not too lean)
  2. 5 pounds potatoes ( No. 10 can Irish whole potatoes with liquid drained
  3. 4.5 pounds of pork (not too lean)
  4. 2 large onions chopped
  5. 5 tablespoons salt
  6. 1 tablespoon
  7. casings
  1. Cut beef and pork into medium sized chunks, leave potatoes whole
  2. Put these in pan
  3. Add seasoning and mix
  4. Add onions and mix
  5. Grind everything at once
  6. Stuff into casings
Cooking the sausage
  1. Put sausage in a skillet with enough water to cover.
  2. Bring to a boil, then turn heat to a simmer.
  3. Cover and cook 20 minutes.
