Ruth's Creme Wafers

"Kids will love them"
Ingredients Wafers
  1. 1 cup butter or shortening
  2. 1/3 cup cream
  3. 2 cups flour
  4. granulated sugar
Ingredients / Prep Filling
  1. 1/4 cup butter
  2. 3/4 cup powdered sugar
  3. 1 tbsp milk (almond milk)
  4. 1 tsp vanilla
  5. Tint with red & green food coloring.
  6. Blend all together
Preparation Wafers
  1. Measure flour dipping method or sifted.
  2. Mix butter, cream & flour thoroughly. Chill for 1 hour
  3. Heat oven to 375 degrees.
  4. Roll chilled dough 1/8 inch thick on a lightly floured board.
  5. Cut into 1 1/2 inch round (you can use any lid )
  6. Transfer to waxed paper, heavely sprinkled with granulated sugar (coat both sides)
  7. Place on ungreased baking sheet and poke in 3 places with a fork.
  8. Bake 7- 9 minutes or till slightly puffy.
  9. Put cooled cookies together with filling.
  10. Makes 5 dozen.
