Ruth's Pinwheels

"Old Favorite"
Ingredients
  1. 2 1/4 cup chopped pitted dates
  2. 1 cup water
  3. 1 cup chopped nutmeats
  4. 1 cup shortening
  5. 2 cup brown sugar
  6. 3 eggs (well beaten)
  7. 4 cups all purpose flour (sifted)
  8. 1/2 tsp salt
  9. 1/2 tsp baking soda
  10. 1 cup granulated sugar
Preparation
  1. COMBINE THE DATES GRANULATED SUGAR, AND WATER IN SAUCEPAN, COOK OVER LOW HEAT UNTIL THICK (APPROXIMATELY 10 MIN); ADD NUTMEATS AND COOL.
  2. MEANWHILE CREAM SHORTENING; ADD BROWN SUGAR GRADUALLY WHILE CREAMING. ADD THE WELL BEATEN EGGS & BEAT WELL. ADD THE REMAINING INGREDIENTS SIFTED TOGETHER AND MIX WELL. (If using an electric beater see notes)
  3. CHILL THOROUGHLY. DIVIDE THE MIXTURE INTO 2 PARTS & ROLL EACH INTO A RECTANGLE A LITTLE LESS THAN 1/4 INCH THICK.
  4. SPREAD EACH WITH DATE FILLING & ROLL UP INTO 2 JELLY ROLLS. CHILL OVERNIGHT.
  5. CUT WITH SHARP KNIFE INTO SLICES 1/4 INCH THICK. BAKE IN 400 DEGREES 10 12 MINUTES. MAKES 5 DOZEN.

Notes

IF USING ELECTRIC BEATER ALLOW SHORTENING TO STAND AT ROOM TEMPERATURE TO SOFTEN. CREAM ABOUT 1 MINUTE AT HIGH SPEED. ADD SUGAR GRADUALLY WITH THE BEATER STILL AT HIGH SPEED. AFTER ALL IS ADDED SCRAPE BOWL and BEAT 1 MIN LONGER. ADD EGGS UNBEATEN ONE AT A TIME AND BEAT FOR 1 MIN AFTER EACH EGG. TURN THE BEATER TO MEDIUM SPEED AND ADD THE SIFTED DRY INGREDIENTS MIXING THOROUGHLY.
