Mama Jan's Pea Salad

"Great with fried chicken"
  1. 3/4 cup mayonnaise
  2. 1 tsp granulated sugar
  3. 1/4 tsp kosher salt
  4. 1/4 tsp pepper
  5. 4 cups frozen peas, thawed
  6. 1/3 cup diced red onion
  7. 3/4 cup cubed sharp cheddar cheese (approximately the same size as the peas)
  8. (Optional) 8 slices bacon  (cooked crispy and crumbled)
  1. Combine mayo, sugar, salt, and pepper in a large bowl.
  2. Add peas, onion, cheese, and (optional) Bacon. Sir gently
  3. Refrigerate at least 2 hours before serving.


This has been a family favorite for years. Another version would be to add 1/4 cup of sour cream and 1/2 lb shrimp (cooked and shelled).
