Minestrone Soup

"Hearty and Healthy"
Ingredients
  1. 2 cans (15oz) canneloni beans or 1 can of kidney beans and 1 can canneloni.
  2. 1 can diced tomatoes (15oz).
  3. 1 medium yellow onion
  4. 1 large potato (peeled and diced)
  5. Small Zucchini (diced)
  6. 2 small carrots (peeled and diced)
  7. 3 cloves garlic (minced)
  8. 1 cup chopped spinach (fresh or frozen)
  9. 28 oz chicken stock (1/3 less sodium)
  10. 3/4 cup small elbow macaroni
  11. 2 tbsp olive oil
  12. 1 tsp salt
  13. 1 tsp pepper
  14. 1 tsp oregano
  15. 1 bay leaf
  16. 1/4 cup fresh chopped parsley
  17. Splash of wine
  18. Shredded Parmesan cheese
Preparation
  1. Chop and dice all vegetables
  2. Put oil in dutch oven add onion, carrot, garlic, and celery and saute until onions transparent.
  3. Add chicken stock, tomato, all vegetables and spices except parsley.
  4. Cook med-high while stirring occasionally until potatoes & carrots cooked (approx 20-30 min.).
  5. Add macaroni, parsley, wine, cook till macaroni is done (approx 10 min.).
  6. Serve with a sprinkle of Parmesan cheese.
