Mexican Rice

Ingredients
  1. 1 cup of long grain rice
  2. 3 tbsp cooking oil
  3. 1/3 cup El Pato tomato sauce (yellow can) for hotter rice add more el Pato.
  4. 2/3 cup low-sodium chicken stock.
  5. 1 cup water
  6. 1/2 tsp pepper
  7. 1/2 tsp season salt (or more to taste)
  8. Optional: add 2 tbsp of homemade salsa.
Preparation
  1. Heat oil in skillet
  2. Pour in rice and stir until brown (approx 5 min)
  3. Pour in water , tomato sauce and chicken stock.
  4. Add seasoning and bring to a boil.
  5. Turn down to low and simmer covered for 20 minutes.
