Chicken Fajitas

"healthy Mexican alternative"
Ingredients
  1. 1 lb boneless chicken breast (cut into 1" cubes)
  2. 1 clove garlic (chopped)
  3. 1 package fajita mix
  4. 3/4 cup water (for mix)
  5. 1 large bell pepper - use red, green or yellow, or a combination (sliced)
  6. 1 large red onion (sliced)
  7. 1/4 cup cilantro
  8. 1 large tomato (cut into wedges)
  9. 1 avocado (sliced)
  10. sour cream (optional)
  11. 1 tbsp olive oil or olive oil spray
  12. flour tortillas (med size)
  13. 2-3 tbsp canola oil.
Preparation
  1. Heat 3 tbsp oil with garlic add chicken and saute on med heat for 5-7 minutes browning all side.
  2. Add onions and peppers and saute for 4-5 minutes on med heat
  3. Add water to fajita mix, stir and add to pan.
  4. Add tomatoes and simmer for 2 minutes - stirring twice.
  5. Heat tortillas , fill with fajita mixture and top with avocados and sour cream.

Notes

Serve with salsa and Mexican rice
