Greek Salad

" Healthy low cal salad"
Ingredients salad
  1. 2 cups cherry (grape) tomatoes
  2. 1 large cucumber ( diced)
  3. 1 large red, yellow, or green bell pepper (diced)
  4. 1/3 cup Kalamata or black olives (halved)
  5. 1/3 cup red onion (diced)
  6. 5 oz crumbled Feta cheese
Ingredients Dressing
  1. 1 cup red wine vinegar
  2. 1 clove garlic (minced)
  3. 1/4 cup olive oil
  4. 1/ tsp oregano
  5. 1/4 tsp salt
  6. 1/4 tsp Dijon mustard
  7. 1/4 tsp pepper
  8. Option: 1/4 cup of Ken's Greek Dressing (very good)
Preparation
  1. Combine salad ingredients
  2. Mix dressing ingredients together. and pour over salad or pour Ken's Greek Dressing over salad.
  3. Toss salad until well mixed.
