Greek Salad
" Healthy low cal salad"
- Ingredients salad

- 2 cups cherry (grape) tomatoes
- 1 large cucumber ( diced)
- 1 large red, yellow, or green bell pepper (diced)
- 1/3 cup Kalamata or black olives (halved)
- 1/3 cup red onion (diced)
- 5 oz crumbled Feta cheese
- Ingredients Dressing

- 1 cup red wine vinegar
- 1 clove garlic (minced)
- 1/4 cup olive oil
- 1/ tsp oregano
- 1/4 tsp salt
- 1/4 tsp Dijon mustard
- 1/4 tsp pepper
- Option: 1/4 cup of Ken's Greek Dressing (very good)
- Preparation

- Combine salad ingredients
- Mix dressing ingredients together. and pour over salad or pour Ken's Greek Dressing over salad.
- Toss salad until well mixed.

serve with pita bread
