Jan's Mac and Cheese

"Comfort Food"
Ingredients
  1. 16 oz elbow macaroni (cooked Aldente')
  2. 1/2 cup unsalted butter
  3. 1/2 cup flour
  4. 1 1/2 cups whole milk
  5. 2 1/2 cups half & half
  6. 4 cups cheddar cheese
  7. 1/2 tsp salt, pepper, & paprika
  8. 1 cup panko crumbs
  9. 3 tbsp unsalted butter (for crumbs)
Preparation
  1. Prepare macaroni (per box directions), drain and set aside.
  2. Pre-Heat oven 350 degrees.
  3. In a large pot over medium heat make a roux with butter & flour
  4. Add milk, cheese, and half & half, stirring constantly.
  5. Stir in seasoning and macaroni heat until cheese is melted.
  6. Pour mixture into buttered 3 quart 9x13" pan.
  7. In a separate pan brown panko crumbs in 3 tbsps of butter and sprinkle over mixture.
  8. Sprinkle additional paprika on top.
  9. Put in oven and bake for 30 - 40 minutes (until bubbly)
