Lamb Chops
"Easter favorite"
- Ingredients

- 6-8 Lamb Chops (french cut); you can use a rack of lamb just slice & trim fat.
- 1/4 cup plus 1 tbsp olive oil
- Package El Guapo Romero (rosemary 3/8 oz)
- 4 cloves garlic
- 1 tsp salt
- 1 tsp black pepper
- mint jelly (optional)
- Preparation

- Add 1/4 cup oil, rosemary, garlic, salt & pepper in a bowl and mix well.
- Coat both sides of chops well and let marinate for 1 hour.
- Heat 1 tbsp of olive oil in a large skillet until hot and turn heat to medium high.
- Cook chops for 5 - 7 minutes per side. Best cooked medium rare (125 degrees) to medium (130 degrees), using a good internal meat thermometer.
- Serve with mint jelly.
