Lamb Chops

"Easter favorite"
Ingredients
  1. 6-8 Lamb Chops (french cut); you can use a rack of lamb just slice & trim fat.
  2. 1/4 cup plus 1 tbsp olive oil
  3. Package El Guapo Romero (rosemary 3/8 oz)
  4. 4 cloves garlic
  5. 1 tsp salt
  6. 1 tsp black pepper
  7. mint jelly (optional)
Preparation
  1. Add 1/4 cup oil, rosemary, garlic, salt & pepper in a bowl and mix well.
  2. Coat both sides of chops well and let marinate for 1 hour.
  3. Heat 1 tbsp of olive oil in a large skillet until hot and turn heat to medium high.
  4. Cook chops for 5 - 7 minutes per side. Best cooked medium rare (125 degrees) to medium (130 degrees), using a good internal meat thermometer.
  5. Serve with mint jelly.
