Coat both sides of chops well and let marinate for 1 hour. Heat 1 tbsp of olive oil in a large skillet until hot and turn heat to medium high. Cook chops for 5 - 7 minutes per side. Best cooked medium rare (125 degrees) to medium (130 degrees), using a good internal meat thermometer. Serve with mint jelly.
