Albondigas Soup

Chavez Family Recipe
Ingredients Meatballs
    1. 1 lb Ground Beef, 80/20

    2. 1 Egg

    3. Handful of rice
    4. 1 tsp Oregano
Preparation meatballs
  1. Mix the above together in a bowl and form into walnut sized meatballs.  Put to the side
Ingredients Soup
    1. 2 Carrots, diced

    2. 2 Celery stalks, diced

    3. ¼ to ½ white or yellow onion, sliced
    4. 2 Russet potatoes, peeled and cubed
    5. 1 can whole peeled tomatoes
    6. Handful of Rice

    7. 1 Large Carton of chicken broth
Preparation meatballs
  1. In a large pot, sauté onions in a little butter or oil, until translucent. 
  2. Add carrots and celery and sweat for a few minutes.
  3. Add chicken broth, rice, and potatoes, bring to a boil. 
  4. Add meatballs and tomatoes.
  5. Cook until potatoes are soft and meatballs are cooked fully.

Notes : Very important to add meatballs only to boiling soup.

Serve with tortillas , chopped cilantro, lime and salsa.
