Albondigas Soup

- Ingredients Meatballs

1 lb Ground Beef, 80/20

1 Egg
- Handful of rice
- 1 tsp Oregano

- Preparation meatballs
-
- Mix the above together in a bowl and form into walnut sized meatballs. Put to the side
- Ingredients Soup

2 Carrots, diced
-
2 Celery stalks, diced
- ¼ to ½ white or yellow onion, sliced
- 2 Russet potatoes, peeled and cubed
- 1 can whole peeled tomatoes

Handful of Rice
- 1 Large Carton of chicken broth

- Preparation meatballs

- In a large pot, sauté onions in a little butter or oil, until translucent.
- Add carrots and celery and sweat for a few minutes.
- Add chicken broth, rice, and potatoes, bring to a boil.
- Add meatballs and tomatoes.

Cook until potatoes are soft and meatballs are cooked fully.
Notes : Very important to add meatballs only to boiling soup.
Serve with tortillas , chopped cilantro, lime and salsa.
