Eggplant Parmesan

This is one of Jan's best dishes. Easy to prepare. Serve with salad and bread sticks"
Ingredients
  1. 1 medium size eggplant (peeled and sliced 1/2" thick)
  2. 2 cups grated mozzarella
  3. 1 can spaghetti sauce
  4. 1/4 cup grated Parmesan
  5. 1/4 cup flour
  6. 2 eggs beaten
  7. 2 tbsp olive oil
Preparation
  1. Dip slices in egg
  2. Dredge in flour
  3. Fry in canola oil till golden brown (turning once)
  4. Line a 9x13 pan with eggplant slices
  5. Sprinkle grated Parmesan
  6. Pour sauce on top
  7. Top with mozzarella cheese
  8. Bake for 10-15 mins (until cheese melts at 350 degrees
  9. Sprinkle with more Parmesan cheese (optional)

Notes

Serve with garlic bread and salad.
