Eggplant Parmesan
This is one of Jan's best dishes. Easy to prepare. Serve with salad and bread sticks"
- Ingredients

- 1 medium size eggplant (peeled and sliced 1/2" thick)
- 2 cups grated mozzarella
- 1 can spaghetti sauce
- 1/4 cup grated Parmesan
- 1/4 cup flour
- 2 eggs beaten
- 2 tbsp olive oil
- Preparation

- Dip slices in egg
- Dredge in flour
- Fry in canola oil till golden brown (turning once)
- Line a 9x13 pan with eggplant slices
- Sprinkle grated Parmesan
- Pour sauce on top
- Top with mozzarella cheese
- Bake for 10-15 mins (until cheese melts at 350 degrees
- Sprinkle with more Parmesan cheese (optional)
Notes
Serve with garlic bread and salad.
