Eggplant Parmesan

This is one of Jan's best dishes. Easy to prepare. Serve with salad and breadsticks"
Ingredients
  1. 1 medium size eggplant (peeled and sliced 1/2" thick)
  2. 2 cups grated mozarella
  3. 1 can spaghetti sauce
  4. 1/4 cup grated parmesean
  5. 1/4 cup flour
  6. 2 eggs beaten
  7. 2 tbls olive oil
Preperation
  1. dip slices in egg
  2. dredge in flour
  3. fry in olive oil till golden brown (turning once)
  4. line a 9x13 pan with eggplant slices
  5. sprinkle grated parmasean
  6. pour sauce on top
  7. top with mozerrella cheese
  8. bake for 10-15 mins (until cheese melts at 350 degrees
  9. sprinkle with more parmesean cheese (optional)

Notes

Serve with Garlic bread and salad.
