Chili Verde with Nopales

Wonderful mexican stew with tomitillos and cactus"
Ingredients
  1. 1 pound tomatillos (husked and rinsed)
  2. 1 can diced green chiles
  3. 2 poblano chiles
  4. 1 medium onion -- chopped
  5. 2 jalapeƱos diced
  6. 3 bunches of cilantro (chopped)
  7. 2 cloves garlic -- minced
  8. 1 1/2 chicken stock
  9. 1 1/2 teaspoon dried oregano
Preperation-Tomatillo Sauce
  1. roast,peel,and seed chiles
  2. heat olive oil in large frying pan
  3. add garlic and onion, cook until transcucent
  4. Add tomatillos, jalapeno, poblanos, green chiles,cilantro,oregeno, and chicken stock
  5. simmer 20 minutes
  6. remove fromheat, let cool for ten minutes
  7. puree in blender.
Preperation-Pork and Nopales
  1. heat oil in a large skillet
  2. sear meat until light brown
  3. add 2 cups of water and salt and simmer until pork is tender (about 20 minutes)
  4. Removefromheat and set aside
  5. In a seperate pan bring 1 quart of water to a boil
  6. add nopales and simmer for 10 minutes, remove from heat and set aside.
  7. Add the tomiatillo sauce and nopales mixture to the pan with the pork.
  8. simmer for 15 minutes
  9. add salt and pepper to taste
  10. serve with warm tortillas
