Split Pea Soup

"soooo gooood!"
Ingredients
  1. 1 small bag split peas (sort & rinse)
  2. 1 1/2 lb ham hock
  3. 1 medium potato (diced)
  4. 2 carrots (diced)
  5. 2 ribs of celery (diced)
  6. 1 medium yellow onion (diced)
  7. 4 cups chicken stock
  8. 2 cloves garlic (minced)
  9. 1 bay leaf
  10. 1 tsp thyme
  11. 1 tsp pepper
  12. 1 tsp salt
  13. 2 tbsp olive oil
Preparation
  1. Saute vegetables (except peas) and garlic with olive oil in a large pot.
  2. Add peas, chicken stock, spices and ham hock
  3. Bring to boil on high heat
  4. Turn heat down to low and simmer covered for 90 minutes.
  5. Remove meat from bone stir and cook uncovered for 30 minutes. (if too thick add more stock or water).
  6. Add more salt & pepper to taste.
