Pesto/Shrimp/Artichoke/Hearts of Palm/Sausage

"Wonderful Italian dish everyone will love"
Ingredients
  1. 1 lb Italian sausage (quartered)
  2. 1 lb shrimp (shelled and de veined)
  3. 1/4 cup pesto
  4. 1/4 cup sun dried tomatoes
  5. 1 can hearts of palm (halved)
  6. 1 can artichoke hearts (halved)
  7. 1/2 lb mushroom (sliced)
  8. 6 cloves garlic
  9. 1 tsp garlic powder
  10. 1 medium onion (diced)
  11. 2-3 cups chicken stock 1/3 less sodium
  12. 1/ tsp oregano
  13. 3 tbsp olive oil
  14. Angel hair pasta
  15. Parmesan cheese (shaved)
  16. 1/2 cup spaghetti sauce (optional)
Preparation
  1. Saute sausage in 3 tbsp olive oil, and 6 cloves of garlic (whole) over medium heat.
  2. Remove garlic when browned and add mushrooms and onions. Saute until soft and sausage done.
  3. Add drained hearts of palm, artichoke hearts, 2 cups chicken stock and spices.
  4. Bring to a boil, then turned down heat to low and simmer for 30 minutes.
  5. Option: add pasta sauce of your choice for a more tomato flavor.
  6. Add more chicken stock if needed.
  7. Add shrimp and simmer for 2 -5 minutes (until shrimp is opaque).
  8. Serve over your favorite pasta and top with Parmesan cheese.
