"Tasty alternative to beef chorizo burritos"
- 1 package soyrizo
- 6 large eggs
- 2 medium / small russet potatoes (diced)
- large flour tortillas
- 2 tbsp cooking oil (canola)
- Grated cheese
- In a large frying pan cook potatoes in oil at medium heat, turning frequently.
- Stir in Soyrizo and mix well.
- Add eggs to pan and stir with spatula until egg thoroughly cooked.
- Fill tortilla with mixture ,, add grated cheese and salsa, and wrap.
