Soyrizo Burritos

"Tasty alternative to beef chorizo burritos"
Ingredients
  1. 1 package soyrizo
  2. 6 large eggs
  3. 2 medium / small russet potatoes (diced)
  4. large flour tortillas
  5. 2 tbsp cooking oil (canola)
  6. Grated cheese
  7. Salsa
Preparation
  1. In a large frying pan cook potatoes in oil at medium heat, turning frequently.
  2. Stir in Soyrizo and mix well.
  3. Add eggs to pan and stir with spatula until egg thoroughly cooked.
  4. Fill tortilla with mixture ,, add grated cheese and salsa, and wrap.
