7 UP Cake

"Great Bundt Cake"
Cake Ingredients
  1. 1 ½ cups butter room temperature
  2. 2 ¾ cups granulated sugar
  3. 5 large eggs room temperature
  4. 2 tablespoons lemon juice
  5. 1 teaspoon vanilla
  6. 3 cups flour
  7. ¾ cup 7 Up soda room temperature
Icing Ingredients
  1. 1 ½ cups powdered sugar
  2. 1 tablespoon lemon juice
  3. 1-2 tablespoons 7 Up soda
Cake Preparation
  1. Preheat the oven to 350 degrees. Liberally grease a 12 cup bundt pan (see note below).
  2. Beat the butter and sugar together with an electric mixer until light and creamy.
  3. Beat in the eggs, one at a time, until fully incorporated. Beat in the lemon juice and vanilla.
  4. Add flour alternately with the 7 Up, beating well after each addition.
  5. Pour the batter into the prepared bundt pan and bake for 65 minutes or until a tester comes out clean.
  6. Cool in the pan for 20 minutes before flipping onto a serving dish to cool completely.
Icing Preparation
  1. Once cool, whisk together the ingredients for the glaze. Add more or less 7 Up to reach the consistency you desire.
  2. Drizzle the glaze over the cooled cake.

Bundt pans can be tricky. use a pan that is in good shape and has non-stick coating. Grease the pan liberally. Great way to make sure your cake releases is to combine equal parts flour, oil, and shortening to form a paste. Brush this on every surface of the pan using a pastry brush. "
