Mediterranean Chicken
- Ingredients

- 4 chicken breasts ( cut slits across)
- 8 oz grape tomatoes
- 4 cloves garlic (minced)
- 1/2 cup chicken stock
- 1 tbsp lemon juice
- 1 med brown onion (diced)
- 1 med zucchini ( 1/4" rounds)
- 1 Japaneses eggplant (1/4" rounds)
- 1/3 cup crumbled feta cheese
- 15 Kalamata olives
- 1/4 cup parsley (chopped)
- 1 tsp oregano (1/2 + 1/2 )
- 2 tbsp olive oil
- salt and pepper to taste
- Preparation

Salt and pepper chicken on both sides and sprinkle 1/2 tsp oregano
- in a large skillet with olive oil, brown chicken both sides until internal temp is 165 degrees.
- Add in onion and garlic and saute until translucent
- Add chicken stock, lemon juice, 1/2 tsp oregano, tomatoes, zucchini, and eggplant. cook until vegetables are done.
- Add olives, parsley and Feta cheese
- Serve with crusty bread
