Mediterranean Chicken

Mediterranean Chicken

Ingredients
  1. 4 chicken breasts ( cut slits across)
  2. 8 oz grape tomatoes
  3. 4 cloves garlic (minced)
  4. 1/2 cup chicken stock
  5. 1 tbsp lemon juice
  6. 1 med brown onion (diced)
  7. 1 med zucchini ( 1/4" rounds)
  8. 1 Japaneses eggplant (1/4" rounds)
  9. 1/3 cup crumbled feta cheese
  10. 15 Kalamata olives
  11. 1/4 cup parsley (chopped)
  12. 1 tsp oregano (1/2 + 1/2 )
  13. 2 tbsp olive oil
  14. salt and pepper to taste
Preparation
  1. Salt and pepper chicken on both sides and sprinkle 1/2 tsp oregano
  2. in a large skillet with olive oil, brown chicken both sides until internal temp is 165 degrees.
  3. Add in onion and garlic and saute until translucent 
  4. Add chicken stock, lemon juice, 1/2 tsp oregano, tomatoes, zucchini, and eggplant. cook until vegetables are done.
  5. Add olives, parsley and Feta cheese
  6. Serve with crusty bread
