Chicken Stir Fry

"Easy & Healthy"
Ingredients
  1. 1 lb boneless skinless chicken breast (diced)
  2. 2 tbsp cooking oil
  3. Stir fry veggie mix (broccoli, carrot, & snap peas) - you can subsitute frozen stir fry mix
  4. 4 large mushrooms
  5. 1 can of water chestnuts
  6. 1/2 bell pepper (diced)
  7. 1/2 onion (diced)
  8. 1 package stir fry mix
  9. 1/4 cup water
  10. 1/2 cup cashews (lightly salted & halved)
  11. 3 cups cooked rice
Preparation
  1. Fry chicken in 2 tbsp of oil until browned and cooked through, stirring constantly .
  2. Add vegetables and stir fry mix to pan and cook at medium heat until vegetables cooked but firm (8-10 minutes).
  3. Stir in cashews and pour over cooked rice.
