Chicken Stir Fry
"Easy & Healthy"
- Ingredients

- 1 lb boneless skinless chicken breast (diced)
- 2 tbsp cooking oil
- Stir fry veggie mix (broccoli, carrot, & snap peas) - you can subsitute frozen stir fry mix
- 4 large mushrooms
- 1 can of water chestnuts
- 1/2 bell pepper (diced)
- 1/2 onion (diced)
- 1 package stir fry mix
- 1/4 cup water
- 1/2 cup cashews (lightly salted & halved)
- 3 cups cooked rice
- Preparation

- Fry chicken in 2 tbsp of oil until browned and cooked through, stirring constantly .
- Add vegetables and stir fry mix to pan and cook at medium heat until vegetables cooked but firm (8-10 minutes).
- Stir in cashews and pour over cooked rice.
