Huevos Rancheros Verde

"Mexican Breakfast"
Ingredients (per person)
  1. 2 eggs
  2. 1/2 large potato (diced)
  3. 1/2 cup refried beans
  4. 1/2 cup leftover chili verde (recipe)
  5. 1/2 pickled jalapeno (minced)
  6. 2 tbsp canola oil
  7. 1 tbsp sour cream
  8. Fresh salsa
  9. 2 corn tortillas
  10. Option: For classic huevos rancheros subsitute chili verde with red salsa simmered until hot.
Preparation
  1. Fry potatoes and jalapeno in 2 tbsp of oil.
  2. Warm up leftover chili verde and refried beans while potatoes are cooking.
  3. Put potatoes, beans and 1 corn tortilla on plate
  4. Fry eggs over easy and lay on top of tortilla.
  5. Pour chili verde meat and sauce (or heated salsa for traditional) over eggs and potatoes.
  6. Top with salsa and sour cream.
